A new suite hotel with restaurant is being built in the dairy on Lake St. Moritz. The episcopal estate from the Middle Ages is only slightly enlarged; the historic buildings and the landscape worth protecting are protected. The public restaurant will be retained for locals and guests from the region.

The historic “dairy” at the east end of Lake St. Moritz is becoming a boutique hotel with twelve suites and wellness facilities. The property, which has been operating as a country inn for a long time, is to be comprehensively rebuilt and slightly enlarged. The main building will be grouped around an open courtyard, and the original character of the former bishop's house and the historic stables will be restored. The new hotel is located in the luxury class, but retains the character of a country inn. A large part of the spacious restaurant, bar and lounge rooms on the ground floor will be open to the public.
The suites are located on the first and second floors and face the lake and the Stazerwald. There is also a spacious wellness area under the roof, which can be used by hotel guests and outsiders. Two suites are also planned in the historically valuable former bishop's house.
The manageable number of rooms in the new hotel helps to calm the surrounding area: As before, access to the dairy will only be possible for hotel guests or on the hotel's shuttle bus, and almost all of the outdoor parking spaces that exist today will disappear under the ground. Among other things, the popular restaurant terrace, which is now almost twice as large, benefits from this.
The project for the new hotel and restaurant was designed by local architect Daniel Pensa and has already been presented to numerous residents as well as experts in historic preservation and landscape protection. The building application for the renovation is now being reviewed by the municipality of St. Moritz and then assessed by the cantonal office for spatial development ARE. It is responsible for the building permit because the dairy is outside the construction zone. The dairy has been owned by St. Moritzer Alta Montagna AG since 2015.
Once the permits have been issued, construction is to begin in spring 2022; until then, current operations will continue. The opening of the new hotel and restaurant is then scheduled for summer 2023.
